Nước Mắm Pha

Vật liệu

  • 1/4 cup nước mắm - fish sauce
  • 2 cups of water (please do the exact measure, do not fill to rim of the cup)
  • 1/8 vinegar (white)
  • 1/2 cup sugar
  • fresh garlic (chopped finely)
  • Tương ớt tỏi - red chili sauce (the one with no seeds) (some eat this tương with phở)
  • 1/2 Fresh lime (if not, u can substitute lemon)

Cách làm

  • Mix all ingredients, except the lime, in a small sauce pan, then cook it till boil (yes! I like to cook my nước mắm),
  • wail till cool, then squeeze in your lime at the end.
I used to pha this with nước dừa tươi (young fresh coconut juice), instead of water, but I think this is not very practical! It sure tastes better, since the sweetness of coconut juice seems dịu hơn, dont know how to say it in English! and I mixed in 2 table spoons of honey together with sugar (less in sugar)!

This nước mắm pha is to eat with bánh cuốn Thanh Trì style, with slices of giò lụa, bean srpout, shredded cucumber, mint herb (rau thơm), ngò, and fried onion sprinkled on top (got to have this one!:))
